    One of my favorite things in the world is a good, made from scratch pizza. As far as I am concerned the chains, the ones that deliver, just don’t get it. Hands down, the best has got to be Sicilian II on Pass Road in Biloxi and that’s not just for pizza, everything they serve is just great. The Sicilian Greek salad is amazing, as is the stuffed manicotti, the linguine, and calzone. You just can’t go wrong at Sicilian II, but the pizza is a must, it is life changing.

    Fields in Ocean Springs is also amazing. There is a full Italian menu, and eight pizzas (they call then flat breads) to choose from, including cheese, Margarita, a white pizza with an alfredo sauce, fungi (mushroom), pepperoni and Italian sausage, scampi and carne. They also have eight appetizers including fried cheese raviolis and four salads, my favorite being the chopped Italian.

    If you go by Fields, make sure to go across the street to the Garage on Cash Alley, they have great hot dogs, and I mean really great, plus (no kidding!) the best fried baloney sandwich you have ever had, Of the five hot dogs, my favorite it the Comeback Dawg with pork belly, pepperjack cheese, grilled onions and comeback sauce. The fried span sicks are good as are the pork belly BLT.

    Butcher Baker in Ocean Springs has a good selection of cheeses and charcuterie, but also an extremely good pizza, very close to Sicilian, and it’s made to order as you watch.

    There are four primary components of a good pizza: crust, sauce, cheese, and spices, and you have got to get each one right if you want a great pizza.

    The crust has to be not too thick and not too thin with just the right amount of crunch and should never be burned! The sauce may be the hardest part as the best are long simmered, like  bolognaise, which is not easy to make, time consuming and there is an art to getting the seasoning, a fair amount of red pepper flakes and a good Italian seasoning, my favorite is made  by Gustus Vita who makes a whole line of seasonings. And of course the cheese! Use the best quality imported Italian cheeses that you can find (and afford!).

    Another trick to a great pizza is an extremely hot oven, it should be from 700f to 900f for a quick cook, 60 to 90 seconds. I have seen commercial pizza ovens that were capable of 1300f.

    There is nothing better than a great pizza, but it does take a little time to cook.
