    The Comfort of Chicken Soup, One Simmering Pot at a Time

    There are certain meals that seem to make everything a little better. A rainy afternoon. The first cool snap of fall. A scratchy throat. A hard day at work. Somehow, a bowl of homemade chicken soup has a way of meeting the moment.

    Maybe that’s why nearly every family has its own version. Some swear by dumplings, others insist on noodles, and plenty of Mississippi kitchens serve it over a scoop of fluffy rice. However you enjoy it, chicken soup has earned its reputation as one of the ultimate comfort foods.

    For generations, grandmothers have insisted it could cure just about anything. Whether or not there’s science behind that claim, there’s no denying the comfort that comes from a warm bowl shared around the table. Sometimes the best medicine isn’t found in a bottle—it’s found in a stockpot slowly simmering on the stove.

    The good news is you don’t have to spend all day roasting a chicken to make a flavorful soup. A store-bought rotisserie chicken makes this recipe surprisingly simple while still delivering that homemade taste everyone loves.

    The secret isn’t just the chicken itself—it’s what you do with what’s left behind.

    Instead of tossing the bones, add them to your chicken stock and let everything simmer together for at least an hour. As the broth gently cooks, the bones release even more flavor, creating a rich, savory base that tastes like it has been cooking all day. It’s an old-fashioned kitchen trick that transforms a simple soup into something truly special.

    While the stock simmers, sauté diced onions, bell peppers, and a little jalapeño until they’re soft and fragrant. The vegetables become sweet as they cook, while the jalapeño adds just enough warmth without overpowering the soup.

    Season the broth with Tony Chachere’s Creole Seasoning, a sprinkle of Italian seasoning, and a pinch of red pepper flakes for just the right amount of Southern flavor. Once the bones have done their job, simply remove them, stir the shredded chicken and vegetables back into the pot, and let everything simmer together for another 10 minutes.

    If you like your chicken soup a little heartier, add a scoop of steamed rice just before serving. It’s a simple addition that turns a comforting soup into a satisfying meal.

    Perhaps the greatest lesson this recipe teaches has nothing to do with ingredients at all.

    Professional chefs have long lived by the phrase “low and slow,” and it’s easy to understand why. Great flavor simply takes time. A gently simmering pot allows every ingredient to work together, creating layers of richness that can’t be rushed.

    It’s also a good reminder outside the kitchen. Some of life’s best things—friendships, family traditions, and favorite recipes—aren’t meant to happen in a hurry.

    So the next time you bring home a rotisserie chicken, save those bones instead of throwing them away. With just a handful of pantry staples and a little patience, you’ll have a pot of chicken soup that’s perfect for sharing with family, delivering to a neighbor who’s under the weather, or simply enjoying on a quiet evening at home.

    Rotisserie Chicken Soup

    Ingredients

    • 1 rotisserie chicken, meat removed and shredded
    • Bones and trimmings from the chicken
    • 2 quarts chicken stock
    • 1 onion, diced
    • 1 bell pepper, diced
    • 1 jalapeño, diced
    • Tony Chachere’s Creole Seasoning, to taste
    • Red pepper flakes, to taste
    • Italian seasoning, to taste
    • Steamed rice (optional)

    Directions

    1. Sauté the onion, bell pepper, and jalapeño over medium-low heat for about 20 minutes, until softened.
    2. In a large pot, combine the chicken stock with the chicken bones and trimmings. Simmer for at least one hour.
    3. Remove and discard the bones.
    4. Stir in the shredded chicken, sautéed vegetables, Tony Chachere’s seasoning, Italian seasoning, and red pepper flakes.
    5. Simmer for an additional 10 minutes.
    6. Serve as is or ladle over steamed rice for an extra-hearty meal.
