It’s tailgating season throughout the Magnolia State and it doesn’t matter if you’re a college football enthusiast or an NFL fan or both, the biggest games of the year deserve the most delicious recipes tossed up on the tailgate.

And it certainly doesn’t matter if you and your friends and family are tailgating in a stadium parking lot, a backyard, or a home kitchen you’ll definitely be the MVP with this great tailgating recipe for Mississippi Comeback Wings drenched in Mississippi Comeback Sauce.

Mississippi Comeback Sauce is a true Mississippi football staple that’s similar to remoulade with a base of mayonnaise and chili sauce. The original Mississippi Comeback Sauce has been credited to The Rotisserie, the first Greek restaurant in Jackson. Several Jackson restaurants serve their own variations of the sauce and many offer bottled comeback sauce.

And here’s a Mississippi Comeback Wings recipe especially for your tailgating events that promises to be mind-blowingly good.

Mississippi Comeback Sauce Recipe

There’s no cooking involved in this sauce recipe. Just mix together 1 cup of mayonnaise, 1/4 cup of ketchup, 1 tbsp of chili sauce, 1 tsp of spicy mustard, 1 tbsp Worcestershire Sauce, 1/2 tsp of hot sauce, 1/2 tsp of garlic powder, 1/2 tsp of onion powder, ground black pepper and the juice of a lemon.

Here’s what you need to dress a pound of chicken wings:

½ tbsp black pepper

½ tbsp kosher salt

1 tsp smoked paprika

1 tsp garlic powder

1 tsp chili powder

As much Mississippi Comeback Sauce as you’d like

Fresh parsley, for garnish

Here’s how to make the wings:

In a small bowl, combine the black pepper, kosher salt, smoked paprika, garlic powder, and chili powder.

Season the wings generously on all sides with the seasoning mixture. If you let the wings sit overnight in the refrigerator they will be extra crispy when grilled, but this step is optional.

Fire up the grill to 400 degrees.

Place your wings directly on the grates and let them grill for about seven minutes per side, or until they are crispy on both sides and reach an internal temperature of 180 degrees.

Remove the wings from the grill.

Pour the Mississippi Comeback sauce into a small bowl and dip each wing in the sauce until they are well-coated.

Finish them off with a sprinkle of fresh parsley and serve immediately.
